About the role

The Grand Millennium Hotel Auckland are looking for an enthusiastic and talented Chef de Partie, experienced in Japanese Cuisine and Sushi making to join a busy and vibrant kitchen team.

You will be self-motivated, well organized and enjoy working in a fast paced environment. You will be responsible for the preparation and cooking of food to the highest company standards, whilst maintaining a clean, safe and tidy work environment at all times.

Key responsibilities

  • Preparation and cooking of Sushi and Japanese food to the highest company standards to satisfy customers expectations
  • Assist in menu planning, creating dishes to go on weekly special menus
  • Maintain a clean, safe and tidy work environment at all times
  • Maintain clear communicate with and support staff in other departments
  • Monitor quality control of dishes produced within the kitchen from preparation to presentation
  • Ensure stock is controlled and rotated
  • Ongoing training and development of all staff, advising them of cooking techniques as per company standard
  • Responsible for health and safety practices within the department
  • Ability to work roster shifts

  • Key Skills and Experience

  • Proven experience in Sushi Preparation
  • Attention to detail with Artistic flair
  • A minimum of two years experience in similar position (a la carte or banquets kitchen)
  • Previous experience working in a kitchen environment within luxury hotels
  • Passion for food and cooking
  • Good organisational skills and a high level of presentation
  • Flexibility to work shifts including weekends
  • Excellent standard of hygiene and personal presentation
  • Team player with the ability to work under pressure
